abstract A method of producing an enzymatically hydrolyzed starch comprising the steps of: (a) first, gelatinizing an n-octenyl succenic anhydride starch by exposing the starch to temperatures between about 120°C and 150°C, and (b) then, enzymatically hydrolyze the gelatinized starch using a fungal alpha-amylase as the enzyme.
