abstract A procedure for the isolation of carotenoid crystals, comprising: drying a part of the plant to obtain a flour; extracting the flour with ethanol, isopropanol, or mixtures thereof at a temperature in the range of 50ºC to 75ºC to obtain oleoresin; enrich the oleoresin by washing with process water at 45ºC, followed by homogenization for a period of 10 to 20 minutes with ethanol, settle, separate and drain the ethanol at a temperature in the range of 25ºC to 50ºC to obtain an enriched oleoresin ; hydrolyze the oleoresin enriched with alcoholic alkali at a temperature in the range of 70 ºC to 80 ºC to obtain the reaction mixture; add hot water at a temperature of 65ºC to 75ºC to the reaction mixture to precipitate the carotenoid crystals; and filter, wash and dry the carotenoid crystals; selecting the vegetable source from the group consisting of marigold flowers (Tagetes erecta), marigold petals, red pepper fruits, and Goji berries (Lycium barbarum).
