abstract | Isolated polypeptide that has an enzymatic activity of glucosyltransferase capable of forming dextrans that have α (1 → 2) branches from sucrose, of α-D-fluoro-glucose, of para-nitrophenyl-α-Dglucopyranoside, of α-D- glucopyranoside-α-D-sorbofuranoside or 4-O-α-D-galactopyranosylsacrose, said polypeptide being characterized: a. because it includes SEQ ID NO: 2, or b. because it comprises a structure constituted, starting from the aminated part of the polypeptide, by a signal sequence, a variable region, a first catalytic domain, a glucan-binding domain and a second catalytic domain, in which framework: i) the sequences of the first and second catalytic domains of said polypeptide have a percentage of similarity with SEQ ID NO: 1 comprised between 65% and 100%, the catalytic triad Asp / Glu / Asp being conserved in the respective positions 230/268/342 of SEQ ID NO: 1, and ii) the glucan binding domain is larger than 500 amino acids. |
