abstract | A method for removing sugar from a juice or liquid derived from a plant and preparing a beverage or food product, the method comprising: (a) (i) fermentation, under aerobic conditions, of a first fraction of the juice or liquid derived from the plant with yeast while adding gas containing oxygen to the juice or liquid by bubbling to dissolve an excess of oxygen in the juice or liquid and provide an aerobic environment to the yeast, and (ii) subsequently add a second fraction of juice or liquid to the first fermented fraction while adding gas containing oxygen to the juice or liquid by bubbling to dissolve an excess of oxygen in the juice or liquid and provide an aerobic environment to the yeast, in the first fermented fraction, to produce a fermentation product containing ethanol; and (b) removal of at least part of the ethanol from the evaporation fermentation product, while maintaining the fermentation product at a temperature below 55 ° C to produce the beverage or food product, in which said step (b) It is done with a falling film evaporator. |
