abstract | A product consisting of a salt prepared by coating raw salt with the amino acid extract obtained by the following processes: obtaining a hydrolyzate by treatment with acid and base of one or more proteins selected from the group consisting of gluten of wheat, corn gluten, defatted soybeans, rice protein, and gelatin, followed by filtration of the hydrolyzate to collect the liquid phase thereof; Concentration of the liquid phase under reduced pressure to make the concentration 1.5 ∼ 2.5 times denser and regulating the pH of the concentrate to a value of 3.1 ∼ 3.3, which leads to glutamate education ; filtration and separation of the glutamate concentrate produced by eduction to separate the solid phase from the liquid phase; and obtaining the amino acid extract containing glutamate by drying and spraying the solid phase, or obtaining the amino acid extract by drying and spraying the liquid phase, or obtaining the mixture of the amino acid extract by mixing the two extracts of above amino acids, in which the product consisting of a salt contains the amino acid extract at the concentration of 3.0 ∼ 10.0% by weight and the crude salt at the concentration of 90.0 ∼ 97.0% by weight . |
