titleOfInvention | Method of production of non-bovine chymosin and its use |
abstract | Method for making cheese, comprising adding a milk-coagulating effective amount of a composition comprising a non-bovine chymosin, produced by the method comprising the steps of (i) isolating or constructing a nucleic acid sequence encoding preprochymosin, prochymosin or chymosin, where the coding sequence is of natural origin and comes from a mammalian species selected from the group consisting of Camelus species (ii) constructing an expression vector comprising said coding sequence and, operatively linked to it, expression signals appropriate allowing the preprochymosin, prochymosin or chymosin to be expressed in a host cell, (iii) transforming said host cell with the expression vector, wherein the host cell is selected from the group consisting of a bacterial cell, a fungal cell ( such as an Aspergillus niger var. awamori cell), a yeast cell and a veget cell al, (iv) culturing the transformed host cell under conditions where the coding sequence is expressed, and (v) collecting the chymosin, to milk and performing other appropriate cheese making steps where the milk is cow's milk. |
