abstract |
Emulsion composition prepared by emulsifying an oil phase component and an aqueous phase component using ghatti gum, wherein the emulsion composition comprises ghatti gum in a proportion greater than 25 parts by weight based on 100 parts by weight of the oil phase component ; ghatti gum has a viscosity of 50 to 3000 mPa · s, which is measured by preparing a 15% by weight aqueous solution of ghatti gum and measuring its viscosity for 1 minute at 20 ° C and 30 rpm using a Brookfield viscometer; and the absorption capacity (1% E) (cell width> = 1 cm) of an aqueous solution obtained by diluting the emulsion composition immediately after preparation with water at a concentration of 1% by weight is less than 0.5 , which is measured at a wavelength of 720 nm compared to ion exchange water, and in which the proportion of ghatti gum in the aqueous phase component containing ghatti gum is 1 to 6% by weight based on 100% by weight of the total amount of the aqueous phase component that ghatti gum contains. |
