abstract A method of producing a mixture of ethyl esters of vegetable fatty acids with a high content of cis isomers of unsaturated fatty acids, characterized in that: a. a mixture of vegetable oils is obtained using a flow cavitation technique, where cavitation is carried out in a flow cavitator that has 3 to 8 cavitation zones, b. The resulting mixture is used as a raw material in the transesterification reaction with ethanol, where the transesterification is carried out in the presence of a catalyst at a temperature below 49 ° C, at atmospheric pressure and in a molar excess of alcohol in relation to to triglycerides, preferably 13 to 16 times, c. after completing the transesterification reaction, the ethanol is evaporated from the reaction mixture, wherein the evaporation process is carried out at a temperature not exceeding 49 ° C, for a time below 0.3 hours, preferably in a vault extractor equipped with spray nozzles with steam diffusers, d. The ester phase is separated and purified, particularly from the remaining catalyst, soaps and glycerin, and then the mixture of the ethyl esters of vegetable fatty acids with a high content of cis isomers of unsaturated fatty acids is clarified.
