abstract Edible IV range potato coating, procedure for application and potatoes coated therewith. # The invention provides a coating for IV range potatoes, the application procedure and the product of portions of coated and packaged potatoes finally obtained. The coating includes a matrix of modified potato starch, preferably hydroxypropylated dialmidon phosphate, and anti-browning agents: sodium ascorbate, calcium ascorbate and citric acid. Said coating is an alternative to sulphite derivatives or metabisulfite, which allows to avoid browning of the packaged potato during its commercialization period, keeping the potato a natural appearance, without generating bad odors or exudations in the container. In addition, the concentrations used do not give rise to unpleasant taste sensations for the consumer. The use of pregelatinized modified starch makes it possible to simplify and reduce the preparation and application of the coating.
