abstract A process for the controlled hydrogenation of a ketose or mixture of ketone-containing sugar to produce a mixture of product comprising at least two stereoisomeric sugar alcohols in a predefined ratio of cis isomer and trans isomer, comprising a) providing a mixture of a reaction comprising said ketone or mixture of sugars containing ketosis, b) adding to said reaction mixture a catalyst concentration based on solid nickel based on the dry sugar content of the ketone or the mixture of sugars containing ketose, preferably a Raney nickel concentration, and c) conducting in said reaction mixture a hydrogenation reaction in the presence of hydrogen gas, characterized in that the process is comprising a heating stage and where the ratio of cis isomer and trans isomer is decreased or i) by increasing the concentration of catalyst based on solid nickel, preferably Raney nickel, ii) by decreasing the start temperature of the heating stage, and / or iii) by decreasing the heating index of the heating stage.
