abstract | Procedure and control system for food sterilization in an autoclave. The procedure comprises: # - periodically obtaining the temperature in the cold spot (T {sub, cold}) of the autoclave (1) during the sterilization process; # - periodically calculating the accumulated lethality and the remaining time (t {sub, rest }) of sterilization to meet a specific target lethality (F {sub, 0}); # - calculate, for a set of setpoint temperatures (T {sub, with}) of the autoclave (1), degradation values of at less a compound of the food to be sterilized estimated after the sterilization process; # - select, based on the estimated degradation values for the different setpoint temperatures, a setpoint temperature (T {sub, with}) in order to minimize the degradation of the food; # - apply the selected setpoint temperature (T {sub, with}) to the autoclave. # The procedure allows control of the sterilization process based on the lethality and deterioration of the organoleptic and nutritional properties of the pr product, thus minimizing product degradation. |
