abstract Process for preparing an acetoglyceride composition comprising a high amount of monoacetyl monoacylglycerides which includes the steps of: (a) providing a reactive mixture comprising parts of long chain fatty acids, parts of glycerol and parts of short chain carboxylic acid; (b) add a catalyst; (c) allow this reactive mixture to approach or achieve equilibrium and optionally divert the position of this equilibrium by eliminating the most volatile component or components of said reactive mixture; (d) inactivate and / or remove the catalyst from the reaction mixture; (e) purify the reaction mixture; wherein the purification phase (e) comprises a separation of said reactive mixture into an acetoglyceride fraction and one or several fractions without acetoglycerides and that at least one of those fractions without acetoglycerides is recycled when incorporated into the reactive mixture provided in phase (a ); wherein the molar ratio of the parts of long chain fatty acids and the glycerol fractions in the reaction mixture provided in phase (a) is between 1: 8 and 1: 3; where the molar ratio of the short chain carboxylic acid portions and the glycerol fractions in the reaction mixture provided in step (a) is between 1.5: 1 and 3: 1; and where the molar ratio of (i) the sum of parts of long chain fatty acids and parts of short chain carboxylic acid and (ii) parts of glycerol does not exceed 2.9: 1; the long chain fatty acid fractions that are acyl parts, where the fatty acid parts have a saturated or unsaturated linear C14-C24 alkyl chain; short chain carboxylic acid fractions that are acetyl groups; the acetoglyceride comprises the following group of compounds: monoacetyl diacylglycerides, monoacyl diacetylglycerides and monoacetyl monoacylglycerides; monoacetyl monoacyl glycerides which are glycerol esters with an acyl group, an acetyl group and a hydroxyl free group; monoacetyl diacylglycerides which are glycerol esters with two acyl groups and one acetyl group; diacetyl monoacylglycerides which are glycerol esters with an acyl group and two acetyl groups; monoacetyl monoacetylglycerides and diacetyl monoacylglycerides which are acetoglycerides with a portion of long chain fatty acids; and monoacetyl diacylglycerides which are glycerides with two parts of long chain fatty acids.
