abstract An antimicrobial composition for controlling microbial contamination in alcoholic fermentation processes, characterized in that the composition comprises: an antimicrobial agent of the guanidine family; an antibiotic agent; and a surfactant, in adequate amounts, sufficient to control contaminants that are wild yeast, Lactobacilli and the bacterial microbiota contained in the must to be fermented; to produce a defloculation effect on said must and to prevent fermentation yeasts from competing with the contaminants for the sugar contained in the must to be fermented; characterized in that the composition comprises from 1% to 5% by weight of the antimicrobial agent of the guanidine family, from 0.05% to 0.5% by weight of the antibiotic agent and from 94.5% to 98.5% by weight of the surfactant.
