abstract The present invention relates to a process for obtaining and isolating an organic fertilizer and grape seeds, from grape residues. These undergo a vermiconversion process, in which the most labile parts are transformed into a high quality organic fertilizer free of polyphenols. The sieving of the organic fertilizer results in a rejection, formed mostly by grape seeds. These maintain a high percentage of their initial polyphenolic content, and are more accessible for extraction, which facilitates obtaining polyphenolic extracts. It is an advantageous procedure because it is respectful of the environment, its low economic costs and the added value of products obtained.
