abstract |
An edible product that is composed of a plurality of differentiated pieces of fat that are in direct contact with each other, each piece of fat comprising: - 15-80% by weight of a solid continuous fat phase having a solid fat content at 25 ° C (N25) of at least 5% by weight; - 20-85% by weight of an oil package that is homogeneously dispersed throughout the continuous fatty phase, said oil package containing 40-95% by weight of liquid oil and 5-60% by weight of an encapsulation matrix that wraps the liquid oil; and - 0-50% by weight of a dispersed aqueous phase; wherein the edible product contains at least 15% liquid oil by weight of the continuous fatty phase and in which the continuous fatty phase, the oil encapsulation and the optional dispersed aqueous phase together represent at least 90% by weight of the edible product. |
