abstract A method of preparing porous microparticles containing phytosterol by preparing a homogeneous melt of a composition comprising (i) a phytosterol component, and (ii) a component selected from at least one of a C10 to C26 fatty acid, a monoglyceride of a C10 to C26 fatty acid, a metal salt of a C10 to C26 fatty acid and / or a surfactant; - let the melt solidify to an amorphous solid material; - process the amorphous solid material to a fine powder; - stir the powder in an aqueous phase; - optionally, separating the microparticles thus obtained from the aqueous phase; and optionally dry the separated microparticles.
