abstract | Procedure for obtaining a liquid syrup with a high maltitol content that has a maltitol concentration greater than 99.0%, characterized in that it comprises the steps that consist of: a) liquefying a starch milk with an α-amylase to obtain a liquefied starch that has a DE between 5 and 10 (including limits); b) carry out a single stage of saccharification of the milk of liquefied starch obtained in step a) in the simultaneous presence of at least one β-amylase and at least one de-branching enzyme comprising a pululanase until obtaining a glucose content of the hydrolyzate less than 5% by weight and of a maltose content of the hydrolyzate greater than 80% by weight, the β-amylase / pululanase ratio being between 0.5 and 2; c) after demineralization and / or concentration of the liquid syrup, as obtained in step b), after a possible filtration, a catalytic hydrogenation to obtain a syrup rich in maltitol; d) with the product obtained in step c), a first chromatographic fractionation until obtaining a liquid syrup having a maltitol concentration greater than 90.0%, then a second chromatographic fractionation with the liquid syrup previously purified until obtaining a liquid syrup that has a maltitol concentration greater than 99.0%. |
