A thickening agent derived from tomato, said agent being characterized in that, based on dry weight: - 0.1-3% by weight, preferably 0.2-1.8% by weight of lycopene; - 14-34% by weight, preferably 18-30% by weight protein; - 11-35% by weight, preferably 15-28% by weight of pectin; - 17-39% by weight, preferably 20-35% by weight of sugars selected from fructose, glucose, and combinations thereof. |
