A method for producing natamycin crystals that are needle-shaped crystals with an average length of between 0.1 and 20 μm, the method comprising the steps of: a) dissolving natamycin in an aqueous solution comprising at least 90% by weight of water at a pH below 4 or above and b) bring the pH to between 4 and 10. |
