abstract The invention describes a strain of lactic bacterium of the native Oenococcus oeni (CECT 7621) species of Castilla-La Mancha, which shows excellent properties for use as a malolactic fermentation initiator (FML) in red wines improving its aromatic quality. When co-inoculated in musts at the beginning of alcoholic fermentation, no abnormal increases in volatile acidity, acetoin or diacetyl are observed, with respect to wines in which only alcoholic fermentation takes place. It does not produce biogenic amines or ethyl carbamate and is adapted to the characteristics of pH, acidity and alcoholic strength of wines from warm regions. The strain maintains its biochemical characteristics after being subjected to the lyophilization processes necessary for its industrial production.
