abstract | A process for producing an improved coffee concentrate, said process comprises the steps of: a) providing a liquid coffee extract by producing a coffee extract using an extraction process that works at: i) a flow rate between kilograms of water per minute and kilograms of coffee from 0.1: 1 to 0.5: 1; ii) a water flow rate of 5 cm to 25 cm per minute; iii) a drainage ratio between the extract mass and the mass of coffee from 4: 1 to 10: 1; and iv) a yield of 17% to 35%; and b) subjecting said liquid coffee extract to heat treatment for an equivalent time of 18 seconds to 28 seconds, at an equivalent temperature of 137 ° C to 149 ° C to adjust the value of the proportion between furfuryl acetate and 4-ethyl guaiac of the improved coffee concentrate obtained at a value that ranges from 50% to 210%, of the value of the ratio between furfuryl acetate and 4-ethyl guaiac of freshly brewed coffee with the same coffee used to produce said coffee concentrate. |
