abstract | Procedure to eliminate tyramine from different sources. The procedure is based on the reactions catalyzed by the genes present in the tyn and hpa gene clusters of Pseudomonas putida U, starting from transforming tyramine and dopamine into 4-hydroxyphenylacetaldehyde and 3,4-dihydroxyphenylacetaldehyde, reaction that can be continued to acids 4- hydroxyphenylacetic and 3,4-dihydroxyphenylacetic acid respectively, through the enzymes of the tyn cluster and which, if complemented with the enzymes of the hpa cluster, allows degradation and tyramine and dopamine in pyruvic acid and succinic acid. The invention further relates to the enzymes that catalyze the process, nucleic acid molecules that encode them, vectors that allow their expression and, especially to recombinant microorganisms transformed with said vectors. In addition, the invention relates to the use of microorganisms that possess the appropriate genes to express the proteins involved in the process to reduce the tyramine and food dopamine. |
