abstract The present invention describes a method of marking fruits that comprises making a superficial incision in a fruit with a laser and depositing on said surface incision a contrast agent comprising salts or oxides of iron or copper at a concentration between 0.001% and 1% with respect to the total weight, capable of reacting with any of the phenolic and polyphenolic compounds present in the surface tissues of the fruit. Said contrast agent may also comprise other additives: acidity regulators, emulsifiers, antioxidants and complexers.
