abstract |
A process for producing a pineapple pineapple extract comprising the steps of: a) hotly extracting crushed and defatted pineapple pineapple material with an aqueous solvent comprising potassium hydroxide; b) separating the particulate matter with an average particle size greater than 0.2 μm, leaving a supernatant liquid; c) adjust the pH of the resulting supernatant liquid between 6.0 and 8.0, characterized in that the process further comprises the steps of: d) filtering the supernatant liquid to obtain a retention fraction; e) suction drying the retention fraction and separating the particles with an average molecular mass less than 30 kDa; and f) suspending the retention fraction in an aqueous solvent comprising potassium hydroxide at a pH between 6.0 and 8.0. |
