abstract | Method for obtaining vegetable proteins and / or peptides comprising the steps: a) previously placing a plant starting material containing proteins and / or peptides in an aqueous matrix; b) optionally separating the solid components from the aqueous matrix and / or clarifying the aqueous matrix; c) isolate at least a portion of the proteins and / or peptides from the aqueous matrix by adsorption on at least one ion exchange membrane of synthetic polymer; d) optionally wash the ion exchange membrane to remove impurities; e) desorbing the proteins and / or peptides of the ion exchange membrane with at least one eluent; f) isolate proteins and / or peptides from the eluent; and g) optionally drying the isolated proteins and / or peptides, in which the desorption of the individual proteins and / or peptides or groups thereof in step e) takes place successively and selectively with the use of several different eluents and , before step c) a part of the proteins and / or peptides is precipitated and separated from the aqueous matrix by denaturation / coagulation. |
