abstract Use of water-insoluble linear poly-alpha-1,4-D-glucans as resistant starch (RS), characterized in that the poly-alpha-1,4-D-glucans are not retrograded, and have an RS content determined by the method of Englyst et al. greater than 70% by weight, in which the water-insoluble linear poly-alpha-1,4-D-glucans can be obtained by reacting an aqueous sucrose solution with a crude protein extract of strain KV832 of the E. coli bacteria that express a nucleic acid sequence that codes for a Neisseria polysaccharea amylosaccharide.
