Production method of parboiled rice and parboiled rice produced by this method. A method of production of parboiled rice that does not require wastewater treatment equipment and that enriches the amount of {ga} -aminobutyric acid contained in parboiled rice. The method includes partially milling the brown rice raw material, moistening the partially ground rice grains by forced air using humid air or fogging, moisture tempering of the moistened rice grains, steam boiling of the tempered rice grains with water at normal pressure to heat the rice grains with steam, steam the heated rice grains in the normal pressure steam boiling process using pressurized steam, cool the pressure steamed rice grains in the pressurized steam boiling stage to cooling at least the surface of the rice grains, finishing milling the cooled rice grains in the cooling step, and drying the finished rice grains by milling. |
