abstract |
A method for obtaining a soy protein material comprising the steps of: Mixing a soy protein material washed in alcohol with water; Adjustment of the pH of the suspension at an acidic pH of less than 6.0; Extraction of soluble components of the acidic pH suspension; Adjusting the pH of the acid pH suspension to a value greater than 7.0 after the extraction of soluble components from the acid pH suspension to achieve a neutralized suspension; and Subject the neutralized suspension to a heat treatment at a sufficient temperature and for a period of time sufficient to change the structure of the soy protein material. |
