It refers to a composition and anprocedure to extract thenβ-lactoglobulin (β-LG)nexisting in products, which consists in the use of a mixture ofna disulfide bridge disrupting agent and an agentndenaturing in a neutral or slightly basic pH buffer,nfollowed by a stage of treatment with a saline solution. They cannbe used to extract β-LG contained innsamples of different origins submitted or not to different processes,nas a stage prior to its analysis by immunoassay. Said methodnIt is valid for product analysis, particularly fornintended for people allergic to β-LG. Theninvention also refers to the analysis ofnβ-LG and especially the analysis bynimmunoassay and more specifically by an assay innimmunoadsorbents with enzymatic detection (ELISA).
