Procedure for detection and identificationnsimultaneous and specific lactic bacteria and bifidobacteria innfermented milks and in milk starter culturesnfermentedn n n The procedure allows the rapid and simultaneous detection and identification of different species of lactic bacteria ( S. thermophilus, L. bulgaricus, L. casei, L. acidophilus ) in mixed cultures with B. lactis, species usually present in yogurt and fermented milks that They contain probiotics. The procedure employs specific DNA primers designed from the 165 rRNA gene for lactic bacteria and the transaldolase gene for bifidobacteria. The identification procedure by specific amplification by PCR is complemented by the separation of the amplified products by polyacrylamide gel electrophoresis with a denaturing gradient (DGGE). The advantage of the method is that it is able to perform in a single reaction the joint identification of mixed cultures present in fermented milks. |
