Method for isolating edible proteins from animal muscle, the procedure comprising: a) obtaining animal muscle, b) adding water or an aqueous solution to the animal muscle to form a mixture, in which the pH of the mixture is sufficiently alkaline to solubilize at least a part of the animal muscle proteins in the animal muscle mixture, c) precipitate the solubilized proteins from the mixture, and d) collect the precipitated proteins, thereby isolating the edible proteins of the animal muscle, in which: ( i) after step (b) at least about 50% by weight of total membrane lipids was removed from the mixture, or (ii) the temperature of the mixture was maintained at 15 ° C or less at each stage of the process and the proteins collected precipitates provided a yield of at least 70% by weight of animal muscle proteins, or (iii) both (i) and (ii). |
