Use of a crosslinked starch with an added phosphate content added from 0.10 to 0.35% for the preparation of an edible product to control the level of glycemia of a mammal, wherein said starch provides less than 25% of the glucose release at 20 minutes, between 30-70% at 120 minutes and more than 60% at 240 minutes, and in which said starch is not a starch with high amylose content, i.e. starch with more of 40% amylose, the starch is in granular form and whereby the release of glucose is measured according to the simulated digestion method as disclosed in the description, and the starch has been dextrinized or oxidized. |
