abstract | A process for preparing a quick-cooking rice comprising the steps of: obtaining a parboiled brown rice with a substantially uniform moisture content of between 19% and 30% by weight; milling said parboiled brown rice with a moisture content of between 19% and 30% by weight to remove the bran, in order to generate transverse surface microcracks in the individual grains without substantial plastic deformation of the individual grains; and drying of the parboiled rice until it reaches microbiological stability, to give rise to a fast-cooking rice that has a substantially natural appearance both before and after cooking and that has a water absorption rate greater than 230 grams per 100 of the rice Dry after cooking in excess of water for 10 minutes, in which the rice is not subjected to any additional processing stage to reduce the cooking time of the rice. |
