An edible composition comprising fat and: 1) at least one transition metal, divalent metal, transition metal compound or divalent metal compound, and 2) from 0.01 to 50% by weight based on the weight of the fat , of emulsifier comprising a carboxylic ester group attached to a carbon chain having 3-6 carbon atoms and one or more free hydroxyl groups, in which the emulsifier comprises a mixture of esterified glycerol emulsifiers and esterified alginates, and also in which 30% or less of the kilocalories in the edible composition are provided by fat. |
