New enzyme, with fructofuranosidase activitynfor obtaining prebiotic oligosaccharides.n n n An industrially viable prebiotic oligosaccharide process is provided that uses a new extracellular enzyme (fructofuranosidase) from Xanthophyllomyces dendrorhous , characterized by also presenting transfructosylase activity. A method of obtaining an enzymatic product with fructofuranosidase activity, as well as the substantially pure enzyme with this activity is also provided. The enzymatic product and the enzyme present as positive aspects a high spectrum of action, high thermostability and a high specific activity. Prebiotic oligosaccharides are used in food. |
