New enzyme for obtaining oligosaccharidesnprebioticsn n n An industrially viable prebiotic oligosaccharide method is provided which uses a new enzyme of Xanthophyllomyces dendrorhous , characterized by presenting α-glucosidase activity. A method of obtaining an enzyme product with α-glucosidase activity as well as the substantially pure enzyme with α-glucosidase activity is also provided. The enzymatic product and the enzyme present as positive aspects a high spectrum of action and a high specific activity. Prebiotic oligosaccharides are used in food. |
