abstract THE PROCEDURE FOR THE PRODUCTION OF ALKALINE METAL SALTS AND ALKALINOTERREAL METAL SALTS OF ASCORBIC ACID 2 MONOPHOSPHATE CONSISTS OF REACTIONING AN ASCORBIC ACID 2 UNDER ALKALINE CONDITIONS WITH A METAL ALKAL ALCALINE SALT DETERMINING THE QUANTITIES OF THE L - ASCORBIC ACID AND HYDROXIDE METAL SALT EMPLOYED AS A BASE OF SUCH WAY THAT THE PH INDEX OF THE MEANS OF REACTION IS MAINTAINED BETWEEN 8 AND 11 APPROXIMATELY AND A GRADUAL GRADUAL TRANSMISSION PLACE IS LOCATED POLYPHOSPHATE TO THE ASCORBIC ACID SALT, UNTIL THE POLYPHOSPHATE HAS BEEN CONSUMED AND THERE IS ONLY THE ASCORBIC ACID 2 MONOPHOSPHATE SALT. ASCORBIC ACID 2 POLYPHOSPHATE IS PREFERRED PREPARED IN SITU AND CALCIUM HYDROXIDE IS USED AS A BASE. INDEPENDENTLY IF THE ASCORBIC ACID 2 POLYPHOSPHATE IS PREPARED SEPARATELY OR IN SITU, SODIUM METAPHOSPHATE IS PREFERREDLY USED AS A PHOSPHORILIZATION AGENT. ANOTHER ASPECT OF THE PRESENT INVENTION CONSISTS THAT ONCE THE REACTION, COOLING AND DILUTION IS CONCLUDED, THE MIXTURE OBTAINED IS DRYED BY SPRAYING UNTIL REACHING AN IDEAFUL VISCOSITY. THE PRODUCT OF THE PROCEDURE ACCORDING TO THE INVENTION IS SUITABLE AS AN ADDITIVE FOR FOOD PRODUCTS INTENDED FOR HUMAN AND ANIMAL CONSUMPTION; IT IS ESPECIALLY STABLE AGAINST OXIDATIVE AND THERMAL DEGRADATION AND SHOWS A SPECIALLY HIGH CONTENT OF ASCORBIC ACID MONOPHOSPHATE AGAINST POLYPHOSPHATES, USING THEREFORE, AND ABOVE ALL FOR THIS SAME, FOR FOOD ENRICHMENT FOR FOOD FOOD.
