THE INVENTION PROVIDES A MODIFIED CEREAL FLOUR, AS A GREAT QUALITY WHEAT PROVIDED THROUGH MODIFICATION AND ADDITIONALLY PROVIDES FOOD PROCESSED WITH CEREAL FLOUR, OF EXCELLENT PROPERTIES, AS ELASTICITY, SOFTNESS AND EXTRA MODERN CITY OF HARVEST AS GROSS MATERIAL. THIS IS ACHIEVED BY A METHOD OF MODIFICATION OF CEREAL FLOUR THROUGH A TREATMENT WITH TRANSGLUTAMINASE DURING THE PROCESS OF GRINDING OF THE CEREAL FLOUR. THE INVENTION ALSO PROVIDES PROCESSED FOODS, BASED ON CEREALS, AS WORKSHOPS, BREADS, REPOSTERY PRODUCTS AND SIMILAR PRODUCTS, PRODUCED FROM THE CEREAL FLOUR MODIFIED AS GROSS MATERIAL. |
