The invention relates to particles. These particles contain, at least on the surface, a wall formed by one or more monosaccharides or oligosaccharides cross-linked by means of interfacial cross-linking in emulsion, preferably at room temperature, between the monosaccharide (s) or oligosaccharide (s), which contains (s) at least one primary alcohol group and a polyfunctional acylating crosslinking agent, preferably a diacid halide and particularly a diacid chloride, to produce ester linkages between the hydroxyl group (s) capable of being acylation (s) of the primary alcohol (s) of the monosaccharide or oligosaccharide and the acyl groups of the polyfunctional acylating agent. These particles can be used for the manufacture of cosmetic, pharmaceutical or food compositions. |
