THE PRESENT INVENTION REFERS TO A METHOD FOR THE PRODUCTION OF CALCIUM-ENRICHED FERMENTED MILK OR OF A FERMENTED MILK DRINK, WHICH CONSISTS OF ADDING HM PECTIN, CALCIUM ONLY TOGETHER WITH ALMIBAR IN ACIDIFIED MILK, LACTICO ACID LACTICO MIXTURE TO A HOMOGENIZATION TREATMENT, AND TO A METHOD FOR THE PRODUCTION OF FERMENTED MILK ENRICHED WITH CALCIUM OR OF A FERMENTED MILK DRINK, WHICH CONSISTS OF SUBMITTING THE ACIDIFIED MILK FERMENTED WITH LACTIC ACID AND HOMIZA HOMENA BLOCK AND MIX BELOW, AND ADD CALCIUM AND MIX. FURTHER REFERS TO FERMENTED MILK ENRICHED WITH CALCIUM OR A FERMENTED MILK DRINK THAT HAS EXCELLENT PHYSICAL STABILITY OBTAINED ACCORDING TO SUCH METHODS. PURSUANT TO THE PRESENT INVENTION, THEY CAN PRODUCE A HIGH PRODUCTION PERFORMANCE THROUGH THE USE OF A BLOCK TYPE HM PECTIN THAT HAS A HIGH TITLE, WITHOUT CAUSING THE VISCOSITY OF THE PRODUCTS DUE TO GELIFICATION, EVEN IF IT IS ENRICHED CALCIUM THAT HAS A HIGH REACTIVITY WITH SUCH PECTIN. FURTHER, EVEN IF THE PRODUCTS ARE STORED DURING A LONG PERIOD OF TIME, THEY DO NOT HAVE ANY PROBLEM SUCH AS THOSE OF PROVIDING A PRECIPITATE, SEPARATE AND ADDED INGREDIENTS CONSIDERED AS A PROBLEM TO BE SOLVED. TO KEEP STORED FOR A LONG PERIOD OF TIME.
