abstract A PROCESS FOR THE SYNTHESIS OF D-TAGATOSA IS PRESENTED BASED ON ISOMERIZING A MIXTURE CONTAINING D-GALACTOSE WITH A METALLIC HYDROXIDE IN THE PRESENCE OF A CATALYST AT A RELATIVELY LOW TEMPERATURE, HIDDEN METAL DIDTAGATOSAL ETA AFTER THE INTERMEDIATE WITH ACID TO OBTAIN D-TAGATOSA. THE METHOD IS ALSO SUITABLE FOR THE SYNTHESIS OF L-TAGATOES FROM LGALACTOSE AND FOR THE RECOVERY OF PURE TAGATOES FROM GROSS TAGATOES SYRUPES. SERUM, DEPROTEINIZED SERUM OR LACTOSE MAY BE USED AS GROSS MATERIALS FOR DGALACTOSE. IN SUCH CASES, LACTOSE IS HYDROLYZED TO D-GALACTOSE AND D-GLUCOSE BEFORE THE ISOMERIZATION STEP.
