abstract |
Proposed are high DP, low monosaccharide galactooligosaccharides obtainable or obtained by the following steps: (i) providing an aqueous lactose solution; (ii) sterilization of the lactose solution; (iii) transgalactosylation of the lactose present in the sterilized lactose solution from step (ii) with the addition of at least one beta-galactosidase within its optimal temperature and pH interval over a period of at least 30 minutes to obtain a reaction mixture; (iv) nanofiltration of the reaction mixture from step (iii) to obtain a monosaccharide-rich permeate P1 and an oligosaccharide-rich retentate R1; (v) post-reaction of the retentate R1 by adding lactose; (vi) inhibition of enzyme bulk in the reaction mixture of step (v), and (vii) formulation of the reaction mixture from step (vi). |
