abstract |
Proposed are galactooligosaccharides with a DP greater than 6 obtained or obtainable by the following steps: (i) providing an aqueous lactose solution; (ii) sterilization of the lactose solution; (iii) transgalactosylation of the lactose present in the sterilized lactose solution from step (ii) while adding a first beta-galactosidase within its optimal temperature and pH range for a period of at least 30 minutes to obtain a first reaction mixture; (iv) inhibition of enzyme bulk in the reaction mixture of step (iii) (v) transgalactosylation of the reaction solution from step (iv)) with addition of a second beta-galactosidase within its optimal temperature and pH range for a period of at least 30 minutes to obtain a second reaction mixture; (vi) inhibition of enzyme bulk in the reaction mixture of step (v), and (vii) formulation of the reaction mixture from step (vi). |
