abstract |
A process for the production of galactooligosaccharides is proposed, comprising the following steps: (i) providing an aqueous lactose solution; (ii) sterilization of the lactose solution; (iii) transgalactosylation of the lactose present in the sterilized lactose solution from step (ii) with the addition of at least one beta-galactosidase within its optimal temperature and pH interval over a period of at least 30 minutes to obtain a reaction mixture; (iv) inhibition of enzyme bulk in the reaction mixture of step (iii), and (v) formulation of the reaction mixture from step (iv), where one (a) inhibits the enzyme mass in whole or in part by setting a pH value outside of the activity optimum; (b) subjecting the reaction mixture together with the inhibited enzyme mass to a filtration to obtain a retentate (R1) and a permeate (P1); (c) separating the inhibited amount of enzyme as retentate (R1) and returning it to step (iii); and (d) forwarding the permeate (P2) containing the galactooligosaccharides to step (v). |
