abstract The invention relates to an easy and mild method of encapsulating lipophilic compounds. To induce coacervation, no acid needs to be added. Therefore, the coacervate capsules of the invention may encapsulate lipophilic actives which are sensitive to acid degradation. In a preferred embodiment of the invention, a vegetarian rapeseed protein isolate is used to encapsulate vegetarian algae oil. The thus obtained product is a vegetarian or even vegan source of polyunsaturated fatty acids.
