abstract A method (S1-S9) is used for operating a cooking appliance (1), wherein at least one measurement profile (V0) for light reflected by a food (G) is recorded (S3-S6) during a heat treatment cycle, a time (tw) of a turning point is determined (S7) from at least one measurement profile (V0) and at least one action is triggered (S9) on the basis of the determined time (tw) of this turning point (S8). A cooking appliance (1) for performing the method (S1-S7) has, in particular: at least one light source (6) directed at the food (G), at least one light sensor (7) directed at the food (G), an evaluation device (8) for storing the at least one measurement profile (V0) and for determining the time (tw) of the turning point and a control device (8) for triggering the at least one action (S9) on the basis of the determined time (tw) of this turning point. The invention is more particularly advantageously applicable to ovens.
