The present invention relates to a method of manufacturing a confection. The method comprises mixing a plurality of ingredients to form a confectionery mass in a mixing station, forming the confectionery mass into a substantially continuous confectionery sheet having a substantially uniform thickness via a forming station and increasing a hardness of the confectionery mass or the confectionery sheet without cooling the confectionery mass or the confectionery sheet to below room temperature. |
