abstract The present application refers to the use of grape stems, a residue from the winery industry, as an alternative to the use of wood chips or staves in the process of wine aging. The present application describes a wine aging process, wherein the grape stems are submitted to a toasting process prior to their addition to the wine to provide sensorial properties to the same, similar to those provided by the use of wood or barrel alternatives.
