A system for detecting gluten in a food sample, comprising: a single-use cartridge, comprising: a sensor comprising; a graphene layer disposed on an underlying substrate; a plurality of antibodies coupled to said graphene layer, said antibodies being configured for specific binding to a gluten protein; a plurality of metallic leads coupled to said antibody functionalized graphene layer for detecting a change in electrical resistance thereof in response to interaction with said gluten protein; said cartridge further comprising an inlet port for receiving the sample and at least one channel for delivering the received sample to the sensor, and said system further comprising an analyzer separate from said cartridge and configured for electrical coupling to the sensor, wherein said analyzer comprises: an analysis module configured to compute a change, if any, in an electrical property of said antibody-functionalized graphene layer in response to exposure of said antibody-functionalized graphene layer to a sample to determine whether gluten is present in said sample. |
