abstract | The present invention relates to native forms of fucoidan polysaccharide, fucoidan desulfated and derivatives obtained by treatment to reach the level of that of fucose-based oligosaccharides containing, preferably but not exclusively, less than 20 units. monosaccharide fucose alpha-linked by a glycosidic bond, with an average molecular weight preferably less than 3 kDa. According to the invention, the poly-and oligosaccharides which are described are natural and safe and are used as a dietary supplement for use in the prevention and treatment of diseases associated with norovirus or rotavirus, Salmonella sp. or Pseudomonas aeruginosa or Campylobacter Jejuni and other enteroviruses and enteric pathogens that cause bacterial gastroenteritis, as well as in the food production process. n The invention also relates to a process for desulfating and fragmenting fucoidans to produce desulfated poly- or oligo-fucoses. |
